A flatness callout on a stamped part after edge trimming, can we use flatness to control the trimming edge? Is it better to use a profile callout here?

Though some folks will probably say that profile of surface should not be used here, I think both options are equally legal. Profile application is shown in fig. 8-27 of Y14.5-2009.

Either is fine, though people may more readily recognize what flatness means.
