We area a consulting firm here in the East Coast and I am assigned to do a multi-use commercial project which includes hotels, retail and parking garage.

Unfortunately the retail side will have a restaurant in the future and one of the client requirement is to have a refrigerated trash room. This space will probably serve two restaurants in the future but will be built as part of the shell building construction. It would have been easy to deal with if we have a food service consultant on board since they usually will provide a prepackage room similar to a walk-in cooler. But as we all know in the consulting business nothing is easy.

So, has anyone have done a design for refrigerated trash room? What institution has the design guide? I would imagine I will need to maintain 40-50F DB and 30RH to minimize odor and decay. Any exhaust requirement?

We have specified individual split systems for small trash rooms. I don't think there are specific requirements, just to keep the space cool and delay decomposition. Also these rooms have very small loads.

Maybe a small exhaust would be useful to keep odors from going out of the room.

I have never done such a project, but if I did, I would first check with local Public Health Authorities to see if it is even allowed.

The design must take into account outside air makeup (for exhaust), corrosive fumes, corrosive condensate, flies, vermin, and fire hazard. How long will this garbage be stored?

This project looks to be potentially messy (no pun intended).

If the developer is a big name company it is likely that they have a set of design guides for you to follow.

If there is such a requirement in the spec it's because they got bit on a past project where they neglected to include one up-front. So there is someone in the developer's organization who knows all about this. Make some calls and ask.

Because of germs,bacteria,possibly insects and rodents, why would you share an A/C sytem used for occupants? In all sensibility, you would want a separate A/C system as mentioned by SPRINKLER1000 and others.

I apologize for the late response but the Owner have decided to hire a kitchen consultant to provide a pre-fab with remote condenser. All we have to do is run chilled water piping to the compressor and they will provide the connection to the unit.
