I am looking at NX8 and realized that the "old edit curve main dialog" is replaced with a new, brief one.
  Then looked at NX7.5 and saw that the change appeared there too.
  ( NX6 has the old dialog)

Since i support users, i'm quite sure that I , sooner or later, will receive the opinion that somebody is missing an absolutely indispensable function... ( I have not found one of these functions myself yet.)
 Is there a way to activate the old dialog in NX7.5 and 8 ?

There's NO way to change the 'double-click' behavior which brings up the NEW Edit Curve dialog even when editing a legacy or 'Basic Curve'.  However, you can resurrect the old Edit Curve menu option (actually there are two different ones available) which will allow you to launch an old Edit dialog and then select a legacy curve to edit it using the old menus.

To enable this, go into the Customize mode, select the tab titled 'Commands'.  Now expand the Category 'Edit' and then select 'Curve'.  You will find there two Commands, one titled 'All (Legacy)...' and the other 'Parameters (Legacy)...'.  Now I think you find that either of these will do the job, so pick one and drag it to wherever you want it to be (if you want it where it originally was, place it on the...

Edit -> Curve ->

...portion of the drop-down menu.

Now to preserve this set-up save your Role and you should be good to go.

Thanks John, That answers my question.

As said, i assume that somebody someday will state that "i could do this and that with the old edit spline and i cannot now".

But , what i do miss is the option to directly use "Fit Spline" on an existing object, - There are no RMB option for this. At least myself has found this action to be very valuable to clean poor splines. This action did exist in the old menu structure. But it is no big thing.

I think you will find that the Customer Default option only enables the legacy Basic Curves (i.e Line and Acrs) dialog.  It does nothing with respect to Splines.  However, there are still tools to 'Fit' and 'Smooth' freeform curves on the Insert and Edit pull-down menus.
