Is there a way in a sketch to project a curve and trim that curve and keep its associativity?

Yes, while in the Sketch Task, after you're projected the curve(s) and created the curves which will be used as the boundaries, go to...

Edit -> Curve -> Trim Recipe Curve...

...and then just trim the curve(s) using the workflow outlined by the dialog.

You're my hero. I do have a question, can you explain the logic behind some of the stuff being in the edit menu like this function and the rest of the stuff being in the insert menu?  I feel like stuff in NX is just placed willy nilly..

The insert menu is for creating new geometry, the edit menu is to modify existing geometry. The confusion can creep in when you do an associative edit which creates new geometry (basically a copy of the existing object).

The idea was to not mess up the normal trim command with something which would be more complicated then it needed to be if all you were doing was trimming normal sketch curves, so we create a separate command.  And so as not to confuse people into thinking that this was perhaps the 'regular' trim option, we placed it on the 'Edit -> Curve' menu so as to make it an explicit 'Edit' function since the normal trim is still basically a sketch 'creation' tool, while performing an associative trim on what is in reality a curve derived from some other object (hence the use of the term 'recipe curve' since it required more than a simple create type operation) is really more of an 'Edit' than an 'Insert' type of operation.
