I need to do some sound level testing.  I know there is off the shelf data loggers for sound level metering.  The price isn't bad I'm mainly wonder if I could sent up the same kind equipment with off the shelf data logger and microphone?

No you couldn't. At least not easily.

The signal processing and calibration is non-trivial.

It totally depends on what you are trying to do. For one thing you won't have good accuracy compared to a dedicated device. Higher end systems will also have built in analysis like FFT. I bought some general mics from B&K several years ago and they were $4000 each, but they are made for testing and have an almost linear response across a broad frequency range.

In short, if there is money on the line I won't trust it. If you only need it for a short while it would be best to rent one, and it should come with a calibrator.
