I am looking to design a vessel with S275 JR steel which is covered by EN 10025-2:2004. However this grade steel is not an option on the Finglow software. Do I use the closest matching material in this case?

Steve is correct! S275JR is not for pressure equipment. Try P265GH, or if you need higher strength : P295GH.
