Marine Shipboard Cable Termination Ampacity

I am trying to determine what ampacity to use for Marine Shipboard Cable (Type P) on 75ºC terminations governed by NEC. Cable sizes larger than 4/0 are not found in NEC 310.15(B)(16) formerly 310.16. They are similar to DLO such as 373, 444, 535, etc... Do I use the next smaller value found in the NEC table?

I think that would be an acceptably conservative approach.  You might see if the cable carries a dual rating where the second rating has a published ampacity in the NEC.  

But also see Article 110.14 in the 2011 NEC.  There are new requirements for labeling of connectors and terminations used on conductors more finely stranded than Class B.

I should have said there are new UL labeling requirements. The connector or termination must be UL listed for the type of wire being used.

The approach you stated is an acceptable practice used in the industry.  You could also look at the following additional standards for guidance: IEEE S-135-1 (Power Cable Ampacity Tables), IEEE 835-1994 (IEEE Standard Power Cable Ampacity Tables)and ICEA P-46-426 (Power Cable Ampacity Table).
