I am looking to hook up a new site to the grid in northern Ontario for the purpose of providing electrical power to a pair of heavy duty water pumps. Each with the following characteristics as provided by manufacturer: 500 HP, 1200 RPM, 3PH, 600 V, 60 Hz, TEFC, Premium Efficiency Baldor Motor.

We will be having HydroOne extend the line about 4km to our site.

What I am uncertain about is what I need to have installed between the pole that the Hydro company brings the line to and my pumps. Transformer? Substation? Some sort of breaker box etc.?

I was a mining guy in school, not electrical, so this is all new to me.

Any comments or suggestions would be greatly appreciated.

You can only get this information from the Utility.  Each one has their own requirements.

Typically when you contact the new business/electric service department, describe your equipment, and likely pay a deposit, they will give/send you all of their service requirements.

If you are lucky, some of this may be online.

I think the main item you need is a EE.  Utility will generally provide the step-down transformer and you will provide necessary service entrance equipment (Service board, main breaker, feeder breakers).  Then you will nee to provide motor starters or VFDs or whatever you plan to use.  

Honestly, for a project this size, you really need a EE with some experience.

You will need someone who is qualified to pull a permit. The utility generally wants to see documentation from the AHJ before connecting the power.
