Trying to figure out wind loading on an open pavilion. The clear and obstructed wind flow is for ceiling and without ceiling (50% coverage), correct?

Also, can I interpolate between, say, 22.5 & 30 degrees for a 26 degree slope?

Are you looking at Figure 6-18B?? Not completely sure about your first question but most tables do allow linear interpolation for slopes (read notes below table) including 6-18B footnote 3.
