Is it possible to run Excel 2007 in Classic mode? I really dislike the use of 'ribbons'.

Comes with no recommendation from me and i'm sure there are others, but this'll get you started.

1. Right Click around the menu-bar and Minimize the Ribbon
2. Right Click around the menu-bar and Show the Quick Access Toolbar Below the Ribbon
3. Right Click the Quick Access Bar and Customize Quick Access Toolbar ... to add the icons you'd like to see

We'll have to see if an add-in tool will do the trick, or maybe something else.

1. (Optional and only if using XL 2010) minimise the ribbon with the ^ button in the top right corner.
2. Press and release the Alt key. The shortcut key for each tab will appear next to each tab label, and when you select a tab by pressing the indicated key the ribbon for that tab appears with the shortcut key for each option.
In short, pressing and releasing the Alt key makes the ribbon work much like a menu system.
