Other than the office testing according to API such PRII etc..
What is the inherent difference between a standard high pressure trunnion ball valve and one that is subsea design? This seems broad I know but basically could I use a 316SS trunnion 6000k ball valve for a subsea application?

As other definitions 'subsea' is a lot of things, as you yourself mention. All is depending on spesifications and exact requirements for exact use, design lifetime without service, exposure to media inside and out, pressure, depth, application etc. etc.
Preliminary answer: not possible to give a general answer, probably not.
Comment: 316SS is not regarded as an accepted material in general for advanced subsea applications.
