Please can you help me find where to specify the gate valves
fire protection piping systems, have reviewed the standard API 600 but not how to relate this specification with ASME B31.3. process piping.

Check with your insurance carrier and see what code or standard they are operating under and get a copy or get the insurance carrier to give you the information.needed.  The fire codes generally specify  a style and type of valve they require. A good majority of the regulations allow CI valves both screwed and flanges though some hang tight with screwed fittings and valves.
Our site has miles and miles of sprinkler systems both wet and dry and almost a 100% were installed by the speciality fire protection and sprinkler systems companies.  The majority of our systems, especially inside, are screwed fittings and valves.
