I have a 12V 2.5A power supply and want to convert it to 5V at 500mA

Go to:

and search thru the applications section for a switching power converter to do this.
Follow the instructions.

You can also use the traditional linear approach:

Use an 7805, a small heatsink and some small capacitors. This will waste some energy but you will get it running in less than have an hour.
