We are designing a small system that ties into an existing system. The existing system acts as a supply to the new. How do I/where do I find, in the WaterCAD program, where to insert the available pressure and supply?

Use a pump and reservoir.  
The reservoir should be at an elevation equal to the entry node point.  
The pump characteristics for flow and pressure should be from your fire flow test.  
There can be other considerations, but if you are a fairly small system hooking into a fairly large system there shouldn't be any problems with this approach.
