I have to do a quick lash-up and I need a dpdt relay, which I do not have, but I do have a bunch of spdt common 5 pin Bosch relays that I will gang a couple together. My question, can the field coils be wired in series, or should they be in parallel? does it make any difference electrically? If I could put them in series, it would simplify the wiring a bit.

If you put them in series, the supply voltage will be divided across the two coils in proportion to the resistance of each coil. If the two coils are identical, then each coil will see half the voltage. Thus, the supply voltage should be twice each coil's requirement. But you might get away with less...
