Is it possible to use words and then change them for off setting so there is a gap between the letters so they can be cut out in sheet metal im using 2005 would be very helpful if this is possible.

Look at sketch text. You'll have access to tons of fonts/sizes that you can emboss, deboss or simply use to create a boss.

You can create a feature with text as the sketch and then cut, emboss, or raise that into the part.
It is usually a PITA since you are restricted on available fonts.
