How should I calculate mass or/and volume of parts in UG? I have the density information.....

You can then put that on a drawing, let us know if you need to know how to do that.

Tools -> Materials -> Assign Materials...
...as this will not only set the density based on selecting a material from the library, it will also assign both Part and Object attributes containing the name of the material as well as making your model suitable for analysis using the NX CAE tools without having to assign additional material specifications during model preperation.

I have under "Assign Materials" four different aluminium materials.
- Aluminum_2014
- Aluminum_5086
- Aluminum_6061
- Aluminum_A356
Do I need to choose one of them?

I think not that John can/will decide which material you need.
These are Grade's of Alumunium that are deliverd with NX or are setup by you NX Administrator.
Doesn't Alu_6061 rings a bell?
If not see your supplier of Tubes/plates and check
If it is only for calculating mass, I think it is ok to choose this one.
A big difference of density between the 4 you can choose from is not.
If it is for CAE, that might be more of an influence on which one you pick because they also specify Yield Stress and much more...
