HDPE pipe is commonly used for underground fire water mains - not for hydrants. Refer to NFPA 24.

You need steel/ductile iron pipe for the hydrant risers for the structural strength.  Hydrants get banged around a lot.  HDPE is an excellent choice for the horizontal runs  -- does not corrode, will flex with small earth movements.  Best joints are thermal or ultrasonic welds.

PE is commonplace for buried fire mains in Australia.

Be careful in refineries or chemical plants where contaminated soil may impact on the PE. main problem is swelling and loss of pressure capacity.

Fire water systems have extremes of unstready transients when hydrants are rapidly deployed. need to check for this in your system as PE does  not have much in the way of design factor. DF is generally 1.3. Weld factor for butt weld in PE can be .8 or lower.

Rapidly stop of a diesel driven pump would be the worst case surge event.
