If a dowel pin is chamfered at one end and domed at the other, which end goes in the press-fit hole? I'm guessing the chamfered end? Thanks!

The chamfered end is inserted first.

Be careful as there are all types of dowel pins, straight, tapered, and grooved along with some other specials.
