Does anyone know if you can make model (as opposed to detail) text parametric?  

The only two ways I know to create model-text is to sketch a datum curve or a cosmetic.  

I would like for the text to automatically be equal to a parameter.  Then, for other text, I would like to define a parameter dependent on the text. Is this possible?

You could insert a note in the model:
Setup > Notes > New
Enter text, ie:

&material

These will show on the model (assuming you have allowed 3D notes to show) & can also be shown on the drawing.

I did try this way and it works as you say. The drawback, however, is that their isn't much control over the placement/size/font/etc.  With the sketched datum curve text, you have full control and can even cut or extrude it into the part.  Is there anyway to add parameter into this type of text?

Nope. There's no way to create a parametric relation to the Sketched Text. It's just dumb geometry.

Submit an enhancement request and PTC may take a look at it some day.
