Basically I would like to see things in a database format where I can go in and drag or paste or drop down select materials without having to open each model and change the iProperties.

Its called the Bill of Material.  This is found in any assembly file.  Simply add the Material column to the existing ones there.  IV2010 and 2011 allow for copy and pasting here.  When you save the file the parts will update with their new material assigned.
