can anyone tell me the extent of underpinning details that is required to be shown on the structural contract drawings in NYC for getting permits? Do the structural drawings need to show all the excavation bracing details under the existing underpinned elements, or can the specifics of the means and methods be left to the contractor?

This is a little vague. Are we talking about a simple house
with no affected neighbouring structures, or a building in a downtown core? That will impact details required.

Yes. This is an addition for an existing 4 story building in NYC with adjacent similar 4-6 story buildings on either side.

I don't know about New York, but someone has to develop the underpinning scheme.  It could be the structural engineer for the overall project, or an engineer for the contractor.  In either case, the responsible design engineer has to be involved.
