is there a seal available for a mechanical slide gate that is 100% leak proof.  I dont beleive there is.  When you deal with a structure that is not static the seal is always going to have a minimal amount of leakage I beleive.

under headwater conditions.  It will not leak when there is no flow.

If it's six inches of head, then seran wrap won't leak.  If it's 5000 feet of head, then it might explode and kill the entire Gulf of Mexico no matter how good it is.

Real answer:  Talk to a manufacturer.  I'm sure they'll have their products rated, and I'm sure they'll talk your ear off about them.
