For a slope rock buttress, what values (range) of cohesion, friction angle and density values would you receommend for use, to indicate that the slope is buttressed and the slip circle does not pass through the buttress. Any references for the values is appreciated.

You should use values that are appropriate for the material that the buttress is constructed of.  

Your comment "... to indicate that the slope is buttressed and the slip circle does not pass through the buttress." indicates that you are approaching the problem backwards.

The correct way is to choose valuse for the buttress, run the stability analysis, adjust geometry and repeat until the design factor of safety is met.
