I'm looking for a site/publication with published values of typical soil coefficients for different soil types.  I'm really just looking for Ko and Ka right now, but I figure they should all be in the same place.

The topic of earth pressure coefficients is covered extensively in every soil mechanics and geotechnical engineering text book.  This information is so basic that, if you are having trouble finding it, you probably should just hire an experienced engineer.

Let me just re-emphasize exactly what it is that I'm looking for.  I'm looking for a published table that lists earth pressure coefficients by soil type.  (ie I can look up fine sandy loam (SM) and identify Ko, Ka, and Kp)

There is such a table under the International Building Code.  That said, you got the best advice from PEinc.

Bowels foundation design is good. Also see slideruleera website for the old US steel steel shetpile design manual.
for cohesive soils K0 is generally about .5 ka will vary depending on how you calculate it, but for medium sands is typically about .3
