Are IEC Soft-Starters placed in the conventional switchboard/MCC, or is there special switchboard/MCC for soft starters?

Soft starters  and VFDs are routinely built in the 'conventional' MCCs along with conventional starters even, in the NEMA world.

Can't imagine why IEC units would not be able to do the same.

What is the approximate relation between the dimensions of the conventional-starters and soft-starters. For example, if a 100HP conventional starter is 12"H X 8"W X 6"D, then what will be the approximate dimensions of equivalent 100HP soft-starter?

I will check catalogues, but for now I just want to get a general idea whether the soft starters have bigger dimensions than the conventional starters; or are the smaller in size than conventional starters?

'It depends!'

Some factors to consider include: whether you can accept ventilation apertures on the board, whether forced draught cooling is acceptable or natural draught only, acceleration time of the load, presence of bypass contactor, etc.

Generally, yes the soft start cubicle will be larger. For a ballpark figure, double the size, but consider the comments above.

I think Scotty's answer is a good safe way to approach it, double the size in most cases. In any case, a soft stater cubicle will NEVER be smaller than a DOL cubicle.

Another general answer - if you find a soft-starter that isn't much bigger than a DOL starter, the load on the motor better be easy to start and you need to pay attention to the current and number of start per hour you attempt.
