Please excuse me if this is a really simple question but I have been struggling with this all day:
I would like to do a drawing of an assembly containing 3 parts I would like to draw 1 view with all 3 parts together and another with 2 of the parts omitted.
Can anyone help?

1) Use an exploded view and hide the components you don't want to see.
2) Use layers and Visible-in-View to turn the layers off in the drawing view.

I prefer the visible-in-view method myself, but there are several methods, depending on your particular requirements.

In out of the box installations you'll actually find the icons for those functions on the explode view toolbar. Perhaps that seems confusing, but you don't require an exploded view for them to be applied. They'll work on any view whether it is exploded or not. For first time users if indeed you don't find the use of these functions completely intuitive and self explanatory then hit F1 for the help files.
