I want to make an assembly where I need to add several of the same item.  Is there a way to add multiple parts?  Or do I have to add the same part one at a time?

Depends on what you are trying to add.

Maybe look into Component Patterns and Derived Component Patterns in Help.  That's about the only way I know beyond just clicking and dragging components already in the Feature Tree into the Assy.

You can do a CTRL-drag from the FM or you can drag and click as many times as you want from your design library.

You can also just CTRL-drag a component directly in the graphics window to copy it to a new location.  This is a really fast way to place a lot of the same part into the assembly.

ctrl+drag works well for components, but not sub-assemblies. For sub-assemblies, you have to grab it out of the FM or you'll end up just dragging a component of the sub-assembly.

Pattern it (Rectangular, circular or feature based). Retain the pattern if suitable or dissolve it.

Watch patterning a components/features. Depending on many components/features you pattern, you could cause some performance degradation.
