I was wondering if anyone could point me in the right direction of how to cover the attached geometry with a surface. I'm very inexperienced with NX so any input would be appreciated.

I'll admit that John's solution looks a lot like what I suppose that you think you wanted, but then again it looks like you might want to shell out the hull to 0.0625 inches thick. If you're interested in the sort of thing that you'd need to do in order to achieve that then take a look at the attached file.
