I have a warehouse for storing green (unroasted) coffee. It's 80,000 sq. ft., and needs to be maintained at 65F (+/-5F) and 65% RH (+/-5%). Due to the climate it will need heating and cooling along with the humidity control. In general, what manufacturer or unit series should I be looking at?

I'm guessing custom because of the need to heat/cool/humidify and dehumidify.

Do the loads for the space. Write a control sequence.
Then send that info to some HVAC manufacturer's, like Trane, Carrier, McQuay and York (now Johnson Controls). So you dont waste your time, ask them if they can match what yopu need, period.
If this is time sensitive project, I would find a custom manufacturer and work with them concurrently, if the other box manufacturers cant help you. But if you can get what you need out of the box, it will be cheaper than custom.

Be cautious with respect to the RH requirement.
I mean, are these beans "wet" when they come in and will they loose moisture which you have to remove in order to maintain 65% or do the beans absorb moisture which you have to add in the process ?!?
Be sure the building envelope can handle the 65% indoor-RH.
If (points of) the inner walls/construction get below dewpoint condensation will occur.
(Depends of course on what climate you're in)
