How is spring rate of a simple end supported beam calculated. Is it simply deflecting force in lbs/deflection in inches.

Work out the deflection at the point of load application then divide by the deflection.

Yes in a nutshell however you need the deflection directly under the load your applying

For a cantilever beam it is 3EI/l^3 off the top of my head.
You will have to work out the SS beam deflection as desertfox indicated.
