I am looking at breaking down the battery banks on a couple of stand alone UPS's and am looking for a good working procedure once the battery banks have been isolated from the system. I already know to take out the links between the batteries and to test the float voltage but is there anything more indepth, many thanks

Specific gravity measurement is the best if they aren't "gel cells".

How big are the batteries?  If this is a large datacenter size UPS the testing might be a little different than a home system.

See IEEE 450 for flooded-cell batteries and IEEE 1188 for immobilized electrolyte type. I have an article on UPS battery testing for larger systems. Let me know If you are interested.
