Can someone tell me if 23/32 GP Dryply Sturd-I-Floor would meet IBC requirements with a 125 psf LL + 10 psf DL supported on 16" centers and/or what design checks should be done and where to find the material strengths? It is unclear which tables in IBC apply to me?

2006 IBC, page 426, Section 2304.7, tables 2304.7(1), (2), (3) and (4) apply, however in these tables the lbs/sq.ft is lower than your design criteria of 135 lbs/total load. Using l/360 deflection base and the material data as pointed out by msquared48 you should meet your goals fairly straight forwardly. I hope this will help a little.
