Dear Friends
We need to qualify PQR the above. Appreciate advise on suitable consumables and welding parameters. Weld Process - GTAW/SMAW.Normally we prefer to use Kobeloco /Esab Consumables.

Copper is difficult to weld properly. Probably your best bet is using GTAW process with appropriate filler material for both materials.  Brazing would be an easier, appropriate method.

Copper brazing (or even soldering - as in ten billion commercial and residencial plumbing connections ...), then use a mechanical connection to get to your stainless steel section of pipe.  (Cu Flange + gasket + SS Flange)

I can't see anything but trouble trying to reliably get even a few copper to stainless connections in the field.  Much less dozens and dozens in many different places.
