When unselecting, either edges for a round or contour elements for an extrude etc., the system defaults to "all of intent". If I want to only remove a few objects I have to use the "hover over alternate" option to unselect only the desired element. Is there a setting to change the default? I am working in NX5.

I assume you mean when editing an existing feature, such as a Blend or an Extrude, correct?

I just checked this using NX 5.0.6.3 and when I edited an existing feature, the Selection Intent option defaulted to WHATEVER 'selection rule' was used when selecting the elements of the feature being edited.  If it was done using 'Single Curve', that is what it will be set when I edit it, or if it were 'Tangent Curves', it will default to that.

No, this happens when fixing a failed/or not failed round or when modifying the profile of an extruded/revolved feature. When you hold the cursor over the element and just shift-pick it it will unselect the entire string (yes probably picked via tangent curves or connected curves) but if you hold still a moment for the QuickPick menu you get the option of unselecting "all of intent" or only the edge of instance or whatever. This is an operation I use a lot wen adding curved to a sketch. my blends very often involve many separate tangent chains if one has a problem I don't want to reselect all the chains. So what I am looking for is an option to reverse the priority of "all of intent" from first to last.

I'm sorry, but that is exactly WHY we implemented QuickPick to work like this when deselecting edges in which more than one possible Selection Intent option could be used.  This IS our solution.  To add additional options controlling how deselect works would only complicate something which already has an easy to use mechanism for overcoming your original 'design intent'.

As a work around you can lower your 'pick delay' to 0 so that NX immediately presents you with the list of objects available for selection (or deselection as the case may be).

Or you can toggle OFF 'QuickPick on Delay' altogether and then QuickPick will only come-up WHEN you want it to and WHEN you want it.  If you want to go into QuickPick, just hold the cursor down over what you're selecting and QuickPick will come-up immediately, but only if you want it to (Don't hold down the cursor and QuickPick will never come-up).  I much prefer to use it this way since I have total control (it only comes up when I want it) and it's faster (no waiting, no delays, when I want it, I make it happen NOW).
