How do I dimension the x, y, and z coordinates between 2 points in a 3D sketch?

If you mean a 3D sketch in a model, select the relevant plane and the point when creating the dimension.

Also, if you hit the TAB key, the dimension reference will toggle thru the XY, XZ and YZ planes.

Either you can dimension them or select each point, define the coordinate values in the property manager and add a fix relation.

I have always found that it is easier to use 2D sketches to control 3D sketches.

What I've done in the past is to use straight lines in each axis then dimension those.  So I would place a construction line Along X-Axis, then one Along Y-Axis and then one Along-Z Axis.  This works great for piping and you can create links in the File Properties and actually use a table in the drawing to call out each point and it is linked to the part.
