Can someone explain to me the reason for injecting mineral water in a power turbine generator ?

Where exactly is the water being 'injected'? And what type of turbine are you referring to?

Large electrical generator stators are normally cooled by water.
So Steam Turbine also needs demineralized water for secondary cooling [auxiliary equipment and some time the Generator itself also.] as marks1080 already said.
Diesel Generator [the motor] is also cooled by demineralized water.
