Can someone explain to me the reason for injecting mineral water in a power turbine generator ?

If it's not for some cooling reason I have no idea...  Not sure it would make a difference if it were mineral water or any other kind of water for that matter.  Unless its a closed nuclear system which should be distilled.

Where exactly is the water being 'injected'?  And what type of turbine are you referring to?

It's injected into the combustion side. I think to reduce NOx in the exhaust.

I think it is about Gas Turbine Power Generation [if it is not for the Generator itself] and it is used in order to control NOX indeed as GTstartup well noted. See [for instance]:
"The principal pollutants associated with gas turbines are oxides of nitrogen (NOx). Control strategies for NOx include water or steam injection and premixed burners as well as the post combustion control by installing a catalytic reduction unit which consists of reacting the NO with injected ammonia in the presence of a catalyst."

Large electrical generator stators are normally cooled by water.
So Steam Turbine also needs demineralized water for secondary cooling [auxiliary equipment and some time the Generator itself also.] as marks1080 already said.
Diesel Generator [the motor] is also cooled by demineralized water.
