Hi! I have a two phase stepper motor to connect to a driver.
The maximum voltage is 70V and the maximum current is 5A. I would need a new cable at least 7m long.

There is already a cable of 2m long with the motor (too short) with :
4 wires for the 2 phases
1 PE wire
1 shield

However, I don't know much about cables I should choose to extend it. Could you give me some direction to search?

Since it is a stepper motor, I would contact the drive and/or motor manufacture and get their recommendation. Usually this is special shielded cable.

But a problem remain for me : how can I know
-the Gauge Size
-the Conductor Count

I had already called both manufacturers who didn't help much. They told me the 2m cable had a diameter of 6.4mm
Can I use this information to calculate the Gauge Size?

Use 20AWG or 18AWG or 16AWG.

Personally I'd probably use stranded sheilded 18AWG with a drain wire connected at both ends.  You could probably use 20AWG if you are pressed for dollars.
