I have currently doing a project for a small restaurant. I have a regular dishwasher machine and sink. Because the grease trap is on the floor surface, I have to use a pump to pump all the water to the grease trap. What size of pump do I need? the sanitary pipe is 2".

If  you cannot drain to the grease trap by gravity, you have to use a sewage ejector.

In my neck of the woods (IPC), these are typically duplex centrifugal pumps that allow for passing 2" solids.  The basin will  have to be sealed and vented.  

If you look at Zoeller pumps, they have several pumps that would likely fit your needs.

But before you go off and order one, I think you will want to rethink pumping to the grease trap.  The basin will need to be sized to accumulate water - so the pumps don't cycle too much.  Any appreciable amount of retention time will cause the grease to solidify/congeal - and any solids to accumulate in the basin.  

While it will not likely be a problem for the pump, it will make a mess in the basin - especially if the grease congeals and floats to the surface - where it will likely not be pumped.

Zoeller makes a similar product for areas like basements where the sewer drain pipe is too high to connect by gravity.

I still think a duplex pump system is appropriate - if you have to pump.  If one pump goes down, you still are operational.  For these systems - which are typically used for extra bathrooms in basements - if the pump goes down, you just don't use the bathroom.  In a restaurant, if the pump goes down, so does the restaurant - since the dishwasher/3 bowl sink will be inoperative.

You will still have a problem with the grease accumulating/settling out in the small retention tank.

How about two floor mounted grease traps - one by the dishwasher and one by the sink.  That way you don't have to travel so far from the farthest fixture.  Once out of the grease trap, you install the pipe below slab and connect to the sanitary.
