I have had this problem not just once.

for restaurant project, if the grease interceptor is on the floor surface,then my sanitary pipes connecting the interceptor  have to be above the floor. But if I have hood far away from the grease interceptor, how I can avoid this problem??

Typically a floor mounted grease interceptor is close to the grease producing equipment.  

If you cannot keep the proximity, locate the grease interceptor in the floor.  Typically, they can be installed in the floor with a metal lid so you can walk on it if you need.

For health and sanitation, PLEASE PUT THE GREASE INTERCEPTOR OUTSIDE.  They are quite nasty to clean.  Would you want to eat from such a kitchen?

I would agree the interceptor "should" go outside, but sometimes they cannot - especially if the kitchen is located in a building that in a major metropolitan area where outside space is a premium.

The newer versions of these are automatic and are supposedly much easier to maintain in sanitary manner.  

I wouldn't worry so much about eating from a kitchen that has an interceptor as I would about a kitchen where the cold products are not kept cold or the hot products are kept hot or the food handlers keeping their hands off themselves or dirty surfaces or money while they are preparing the food.
