Hey,
Everybody ever made a label with extrude sheet function?
And when the label is inserted into an assembly it changes its shape. Shape will be defined with other assembly part. Let sey an cylinder or tube or something.

You know what you are trying to achieve, we don't - It sounds like you have an issue with Extrude, but there again...

The part 'label' is just a flat rectangle, add it to an assembly, it takes on the shape of the surface it is stuck to, but retains the same basic outer dimensions?

Yes, I want to wrap a label around a bottle for example, and that it takes the shape of the surface it's stuck to and also retains the same basic dimensions.

If you want to 2D curves and text to conical or cylindrical faces then I'd urge you to look into Insert>Curve from Curves>Wrap/Unwrap. If the faces are free form surfaces my best advice is to approximate them to a cylinder or cone wrap the curves and then project them. You'll usually find that you're able to get close enough for anything that you're likely to require.
Lastly if you just want to create something for visualisation purposes using shaded images then you can create a tiff file of the label outside of NX, and apply it to a surface to create the appearance of the wrapped label.
