I inserted an assembly (part with fasteners) into an assembly, then decided that I needed two of them, so I did a 'copy with mates'.
The original part that was inserted shows up black, here and in other assemblies where it's used, which is actually the color of the real part.
The copied part appears gray, which I actually prefer anyway, but I can't find a difference between the two, or anywhere that the original part is identified as black.
Clues?

There's a whole hierarchy to colors. I'm pretty sure you can find that info in the help files.

the first of which is an assembly icon with an Xed box,
the second is a part icon with a greyed box.
RMB/Ball for the copied instance in the feature tree brings up a check list with a ball over three items,
the first of which is an assembly icon with a greyed box,
the second is an assembly icon with an Xed box,
the third is a part icon with a greyed box.
Clicking the last line (part icon/ greyed box) in either
section brings up a dialog that allows selection of
'apply at component level' or
'apply at part document level'.
Both are dotted at 'part document'.
{ That a greyed box should do anything at all is confusing enough, but that's another issue.}
Clicking the checked box for the first instance brings up a dialog with the same choices, dotted at 'component level', over a 'color' dialog box wtih 202/209/238 for RGB.
Clicking the checked box for the copied instance brings up a dialog exactly the same, 'component level', 202/209/238.
Clicking the first greyed box (of three lines) of the copied instance brings up a similar dialog box with a different color, i.e. 'component level', 192/192/192.
Changing the color triad to 0/0/0 makes the part black, but it's somehow more glossy than the other one. So I undid it until I understand what's going on a little better.
Changing the color triad of the first greyed box of the copied instance to 202/209/238, like the first instance, makes the part a different shade of grey, and seems to add some specularity, but it doesn't make it black.
RMB/Ball at the top of the tree within the part file brings up a ball over a blank greyed box, which brings up a dialog with a slider marked 'Appearance' that continuously adjusts the part color from dark gray (not black) to light gray. I left it set at 0, where I found it.
RMB/Appearance/Appearance does the same thing.
So I guess I have three questions:
Why is the part (in its own part file and as the 'root' instance in an assembly) shown in black?
Why does a copy not copy the black?
Where is the black (color 0/0/0 or thereabouts) coming from?
The help for 'color' was not all that helpful.
Help for 'appearance' was slightly better.
Okay, I've got a workaround, so I'm okay for now, but I'm pretty weirded out, too.
