How to design truss members? is U channels allowed? or they will make load eccentricity?

I generally like to have chord members symmetric.

"How to design truss memebers?"  Are you talking about basic statics, or suggestions on fabrication?
"is U channels allowed?" I assume you mean for web members?  U members, with crimped ends are common for web members, back to back angles are common for larger truss chords and webs.

Since it is obvious you do not know how to design a truss, I STRONGLY suggest that you seek the services of a licensed structural engineer.  We cannot teach you here.
