I would like to redefine the orientation of the global coordinate system (XYZ) of the part assembly.

If it's an assy, 'simply' adjust the mates to re-orient the parts, starting with the part at the top of the list. Hopefully the assy has been created with that first part being the only one referencing the main reference planes. If not be prepared to see and fix a lot of mate errors.
If it's a part you have several alternatives;
1) Use the Orientation tool (space bar).
This is probably the simplest method, but has the 'drawback' that anyone at any time can reset the CS to the default.
2) Use the Move?Copy Bodies tool to re-orient the part. This will create an extra feature in the Feature Manager which can also be reset by suppressing or deleting that feature.
3) Use the Reference Geometry > Cordinate System tool to create a new CS, Save as a parasolid using the Output coordinate system option, then open that parasolid. That will not create an extra feature ... in fact you will have no features at all unless you use the Feature Recognition function.
