I am new to NX5. How would I set dimension text defaults?

If you're using drawing templates, you will need to open those files one at a time and while in the drafting model, go to...

Preferences -> Annotation...

...and select the various tabs labeled 'Dimensions', 'Line/Arrows', 'Lettering', and any of the other tabs which might be relevant and with each one set your desired defaults and then finally hit OK and save your template file.

Now if you're not using predefine templates, but rather starting from scratch each time, then you will need to make the same basic settings by going to...

File -> Utilities -> Customer Defaults -> Drafting

...and making them there.
