... how can I define the bend formular individual for a each single flange compared to the old sheetmetall functions?

You can modify, on a case-by-case basis, the 'Bend Parameters' (Bend Radius and/or Neutral Factor) for individual Flange features, either at the time the feature is being created or by editing it afterwords, by expanding the 'Bend Parameters' section of the Flange dialog and asking that the Global Values NOT be used by un-toggling the 'Use Global Values' option(s) and then entering your own values.

As for creating a Drawn Cutout, go to...

Insert -> Punch -> Drawn Cutout...

As for the 'Validation Parameters', go to...

Preferences -> NX Sheet Metal -> Sheet Metal Validation

...and once in this dialog press the F1 key and when the help documentation, 'Changing the defaults', comes up, go to the bottom of the page and read the section titled 'Sheet Metal Validation'.  There is also a link there which will take you to the document titled 'Validate NX Sheet Metal parts by running checks' which will explain how the 'Validation Parameters' are used to help assure that the part can actually be manufactured.

Bend parameters:
- define a fixed extend?
fixed parameters for example 5mm for exend are not allowed.
In my case we have table/list based on company knowlegde, with a fixed extend based on sheet thickness, bend radius, bend angle and machine tool. Is there a workaround to enter values from this list?
