Does SE provide default captions for common drawing views (eg Front, Top, Right, ISO), or do you have to type these in by hand?  

I don't see them, so I'm guessing not, but thought it was worth asking.

You will have to type them in if you want them.
But if you create a quick-sheet template you could have them already there.

The thing I find is that unless you really think about how your part is aligned when you initially model (which I try to do but most around here don't) your parts 'top' doesn't necessarily correspond to the default 'top'.

So by default pulling through the default orientation views is of limited value.

I agree with Kenat.
For SE the default names are of little use, sometimes you will place a back view first, then maybe fold a right and bottom view, so this could confuse the person reading the drawing.
For what it's worth Catia V5 is slightly different - it treats the first view placed as the Front view, then names the others accordingly. As someone used to a front view always being on the XZ plane I found this a little confusing.

I agree that what constitutes the "top" or "front" of a part can be arbitrary.  But for a lot of parts there are usually logical choices.  If a part has an obvious top and bottom, front and back, I usually try to model it that way (so the top is what shows when in the top view, the front is what shows when in the front view, etc). I expect that's what most people do, as it makes the modeling a little easier.   When doing this the drawing views normally correspond as well. So having default drawing labels that reflect this can be convenient.  The CAD package I used before had that, and I find I miss it in SE.  Not a big deal though.
