If you have a piece of pipe with 11 threads, how many of the threads should be buried into the fitting, to be considered tight?  5 out of 11, 6 out of 11, or more?

ANSI B2.1 provides the handtight engagement lengths, which can also be found in Machinery's Handbook.

The length varies with diameter of pipe, 4 pipe sizes have 11.5 tpi. Regardless you will need a minimum of 5 threads engaged to be "Handtight"

The last 3 threads are imperfect, so you normally shouldn't run the fitting up onto them. Lots of garbage fittings out there anymore though, so it happens. Normally, set the dies so you've got 3 to 4 turns to handtight, wrench the rest. Art meets science here, though since fittings like tees and 90's etc need to be oriented correctly. You just can't "wrench until tight".
