Is there a way to create a model using the ANSYS GUI and then solve that model in Batch mode?  I have been creating .txt files with all of the ANSYS commands and running that in batch mode but it seems to me there should be a way to do all the designing in the GUI and solve it in batch mode.

You can using the Ansys product launcher.  Check out the different options afforded to you there.

Make the model in the GUI then under file menu select save DB log... then change the file extension to *.inp.  Be sure to delete the 1st 2 lines of the log file also.  Then use that as your input file and voila... you have a batch from gui.
