I need to size a grinder pump for an Art Museum.  Is there a way to estimate flows based on fixture count?  Or could one use a certain gpm per square foot of building space.
Eveything I have found online references flow calcs based on residential flow.

You will get the most accurate estimate if you use the fixture count method.

The Art Museum has 5 sinks, 1 mop sink, 9 lavatorys, 8 toilets, and 2 urinals.  What are the flow vales assigned to these type of fixtures?

Your local plumbing code will tell you exactly that.

Lavatory =  2 DFU
Water Closet = 4 DFU
Sink Service = 2 DFU
Urinal Pedestal = 6 DFU
Mop Sink = 2 DFU

2 DFU = 1 GPM.

Reference: Piping Handbook

These numbers will vary somewhat on the type of fixture and the age of the fixture. Newer fixtures will use less water.
